Thanks Ted for letting me come out and help make your Birthday Awesome!!! It was a creative and fun adventure for the Alaskan Chef featuring creations inspired by my love for and experiences with growing up in Alaska. Thank you so much for the stellar review and for giving me the opportunity to create this incredible menu.
1. Critter soup ( inspired by my mother a chowder with sea creatures)
2. Ceviche with shrimp Halibut and pickled vegetables
3. Halibut Olympia (barded halibut baked with rice and fire toasted peppers
4. Eskimo Candy (my family’s smoked salmon with candied jalapeños, cheese spread, on a sourdough crostini topped with whitefish caviar
5. Smoked reindeer ( reindeer back strap seared and smoked served with heirloom potatoes and blueberry Demi glaze)
6. Mussel sauté ( mussels sautéed with herb butter and roasted red pepper puree)
7. Maple smash drink ( smashed smoked grilled peaches with bourbon, maple syrup, orange juice, lemon juice)
8. Baked Alaska on fire ( cake topped with ice cream, toasted meringue lit on fire with 151 rum see video)
