Hey hey TJ ( ) this is kinda sorta not correct. Emmer and Farro are the two wheat names that commonly refer to a shared ancient grain. Spelt is the name for a different strain or variety of wheat. Yes, all are ancient grains (Yay for offering it!!!!! 😁) but they do have slight differences in flavor, texture, and nutrition.

Dinner and more is served!!
I played around with a pizza recipe from and a focaccia recipe from over the weekend. Of course I added in some locally grown and milled flours for extra flavor and depth! .
The flavors were great and both were a good starting point. I think tweaking some of the mix and having a warmer place for the fermentation would help. 68 degrees is very comfy for the family but not yeast.

Oh well, still yummy and good to eat!!

I picked up a new cook book for fun today and read this by Alex Stupak and Jordana Rothman. The focus is well targeted on how we value ethnic foods vs Eurocentric foods and they make an overdue an excellent point. But, one could easily apply the same words to how people value the flours I mill. “I guess it’s true that you get what you pay for. “
