This cheddar is the longest aged cheese I have. We've eaten all the rest before they had time to age a good while. This one was made 10 months ago and I'm just now cutting into it.
It didn't disappoint!
I've been diligent to follow the rules with cheesemaking. It's unfamiliar territory and I hate messing things up.
This. This is GOOOOOD π I don't say this in a bragging sort of way, but because I'm so stinkin surprised! I'm my own worst critic and often doubt my own ability. Even when others compliment and encourage me. So this feels like homestead victory π I'm just tickled to death! Ecstatic that I could make something that tastes as good as the cheese found at
Stokes' cheese is life y'all. If you've never stopped in and gotten cheese there, GO! Go now!
What I would do different - press using a little less weight because it's on the drier side, but the taste...π€©
