This cheddar is the longest aged cheese I have. We've eaten all the rest before they had time to age a good while. This one was made 10 months ago and I'm just now cutting into it.

It didn't disappoint!

I've been diligent to follow the rules with cheesemaking. It's unfamiliar territory and I hate messing things up.

This. This is GOOOOOD 😏 I don't say this in a bragging sort of way, but because I'm so stinkin surprised! I'm my own worst critic and often doubt my own ability. Even when others compliment and encourage me. So this feels like homestead victory 😁 I'm just tickled to death! Ecstatic that I could make something that tastes as good as the cheese found at

Stokes' cheese is life y'all. If you've never stopped in and gotten cheese there, GO! Go now!

There was a time I didn't have cows on the mind. I set out raised beds, a garden, and a firepit behind the house. You see, the back side has the best view. We call it the "mountain side" because you can see the Blue Ridge Mountains best from there.

Now, the back yard, well, and the front, AND the other side, are all "pasture". So, I've finally moved everything to the other side of the house, where it should've been all along πŸ˜† See, this side was completely unused space. Our driveway parallels it and it's flat. Why I ever put anything on the back side with the downhill slope is beyond me 🀣

Goodness, if we're all being honest, it was always our HVAC units with their giant metal boxes and constant noise (especially in the summerπŸ€¦πŸ»β€β™€οΈ). Oh well. All is right in world now😁 And, I'm enjoying sitting here tonight watching the sun go down and the cool breeze blow in.

This summer has been rough on our grass. Our property began as acres of overgrown wooded land. It had been logged once long, long ago. A previous soil test showed it's largely acidic.

So I went over to County Farm Service today to talk about grass seed. We've fed hay in the front where we cleared but, we still need seed and I'm being picky. I don't want a run-of-the-mill pasture mix. I also want legumes, the best conglomeration I can afford for our dairy cows. They may be few but, we count on them immensely to provide milk and meat using sunshine and greens.

The guy at the counter, a kind older gentleman with a mustache and a calm voice, knew his stuff. I love that he made comments about pasture mixes being expensive and best for horses, we could piece something together 😏 I came back with homework. We'll see what we can figure out when I return tomorrow.
