se the protein molecule is essentially a spiral, or a spring. The higher the protein, the longer the molecule, and the strechier the bread. Bread rises as the protein molecule stretches. So, choose high protein wheat. We triple clean our wheat; using aeration fans, screens, and indents to have as clean a wheat as possible. This is the same cleaning process we use for cleaning seed for our fussy farmers. The buckets are for the person who wants to have storage available long term for emergency storage. Cindy and I have wheat in buckets that we stored in 1984, that is in excellent condition. Bucket storage is viable for decades, as long as you keep it cool and dry. Store your food items in a low oxygen environment. Just like moisture causes metals to rust, oxygen causes foods to slowly degrade. We use Nitrogen to force most of the oxygen from our buckets. Bags are for the cook who uses wheat regularly, or has their own buckets. The same wheat as goes in our buckets goes into the bags. But because the cost is less, we can sell the bags for less. A bag sells for $15.00
