This is a good example of what bad quality pork looks like.
This is why all of our pigs are carefully selected for traits that matter to your family’s dinner table. They are bred for larger loins for more pork chops, excellent muscle development, and a perfect balance of fat-to-meat ratio that develops flavor without excess waste.

Know your breed and what to feed them!
(This one was a kune kune cross, the customer was not sure what it was crossed with).
Just because you raised a big fat pig, does not mean you will have a large return on your meat.
There are certain breeds that are bred specifically for their lard. This is a pork chop from one of those pigs.
***edited to add, if raised and fed correctly most will not look like this. This is an extreme and can happen in butcher hog breeds as well. This post was intended to stimulate educational conversations among farmers, nothing further.
