Enjoy this devine soup on a lovely autumnal, misty day in the circle of your loved ones

• 1 Tbsp olive oil
• 1 1/4 cups 1/4-inch diced carrots
• 1 1/4 cups diced yellow onion
• 3/4 cup 1/4-inch diced celery
• 4 cloves garlic , minced
• 2 tsp red pepper flakes (adj to your liking)
• 8 cups chicken stock (or broth)
• 1 cup dry acini de pepe or orzo pasta**
• 6 oz fresh spinach , chopped
• Meatballs (check out out meatballs recipe!)
• Finely shredded parmesan , for serving

Heat 1 Tbsp olive oil in a large pot over medium-high heat. Add garlic and red pepper flakes sauté for one minute (until fragrant) Add carrots, onions and celery and saute until veggies have softened about 6 - 8 minutes

Pour in chicken stock, season soup with salt and a generous amount pepper to taste and bring mixture to a boil. ***Add in pasta (see note)
add meatballs, reduce heat to light boil (about medium or medium-low).

Cover and cook, stirring occasionally until pasta is tender, about 10 minutes, while adding in spinach during the last minute of cooking. Serve warm, sprinkle each serving with parmesan cheese.

** boil pasta according to box/product directions separately. Once it is finished boiling add to soup (as per instructions). This will allow the pasta not to suck up all of your broth.

To kick off , we’d like to give a shout out to all the markets out there offering Certified , , and Certified products to their customers. Farmers markets are essential in supporting farmers and regional economies while providing fresh, sustainable nutrient-dense foods to their community. What’s not to love?

Continuing our journey down the Atlantic Coast, we’ve arrived at Pork Stork to visit owner Frauke Bruns and her partner, Doug Zemanek. Frauke and Doug raise Certified pigs at their farm in Rhoadesville, Virgina. Frauke explained, “We started this farm business to make use of our mostly wooded property and clear it without using commercial landscaping equipment. The pigs do a great job of that! The pine trees and some of the poplar trees are cut down to provide the hardwood trees more space and light. Our AWA pigs are living in fenced areas where they can roam about and wallow. The love to eat leaves, pine needles and winding weeds. We don’t use herbicides or fertilizers since we believe that protecting the water is key for our , and we raise our animals without added hormones or subtherapeutic antibiotic use for growth acceleration. Our certification is important to us since we want to farm with the utmost respect for our animals.” Learn more: https://agreenerworld.org/southeast/basel-llc-rhoadesville-va/

FALL RUGBY REGISTRATION !
Culpeper Rugby Families,

We are excited to open registration for fall rugby. Going forward, all players need to be registered for practices and competitions. As a reminder, we will be offering rugby training and tag games through the month of October and hope to play a series of tackle games during November. Please note that all plans can move forward or backwards depending on COVID-19.

To register please follow the link below:
https://usarugby.sportlomo.com/

Search Type: select “Youth and HS”

Search Club Name: Select “Culpeper Youth”
Click “Register”

Select:
“Youth Player “- (For all players grades 3rd – 8th that plan to practice or play tackle rugby anytime over the next 12 months. We expect most of our players will fall into this level.)
or

Confirm & Pay
IMPORTANT NOTES – PLEASE READ BEFORE REGISTRATION
This season your club dues will include a $10 credit to the club store to apply towards team merchandise.

Most of the registration information is requested by USA Rugby. Our club does not need your player’s school, race, or photo. Feel free to provide information as you see comfortable. We have noticed that “Nunya” is an acceptable option for many questions.

Your initial registration includes membership dues towards USA Rugby ($25) and Rugby VA ($16). These are one-time fees and memberships are valid through 8/31/2021. This means your player will be registered and able to compete in USA Rugby and Rugby VA competitions through 8/31/21. For future seasons, your player will only need to pay club dues for all registrations through 8/31/2021 – ex. spring rugby, summer rugby. We expect club dues for each season to remain below $50.

Dues towards USA Rugby help provide our club with insurance, training for coaches and players, and national development opportunities. Rugby VA dues help pay for scheduling and hosting regular season matches as well as post-season tournaments, referees, and training. Club dues help pay for coach certifications, PPE /health/sanitation equipment, game & training equipment, uniforms, and facility rentals.

Our club does not want money to prevent a player from participating in rugby. If your player needs a scholarship, financial assistance, dues plan or other accommodations please reply to this email and we will work with our club treasurer to help.

Our club can maintain low dues and provide financial support due to the donations, support and sponsorships we have received from the following local organizations, please make sure to thank and support them:
Kash Imprints, Paul Davis Restoration of Central Virginia, Pork Stork, Tropical Smoothie Cafe, Culpeper County Parks & Recreation
