Red Velvet Cheesecake
Ingredients:
For the Red Velvet Layer:
1 box red velvet cake mix
Additional ingredients as listed on the cake mix box
Butter and flour for greasing and dusting the cake pan
For the Cheesecake Layer:
2 packages (16 oz total) of cream cheese, softened
2/3 cup sugar
2 large eggs
1/3 cup sour cream
1 tbsp. flour
1 tsp. vanilla extract
1/4 tsp. kosher salt
For the Whipped Cream Layer:
2 cups heavy cream
4 tbsps powdered sugar
2 tsp vanilla
Instructions:
Prepare the Red Velvet Cake Layer: Preheat oven to 350F. Butter and flour a 9" springform cake pan. Make the red velvet cake batter as per instructions on the box. Pour the batter into the prepared pan and bake for 30-32 minutes. Let it cool slightly, then remove from the pan. If the top isn't flat, use a cake leveler or knife to even it out. Set aside.
Prepare the Cheesecake Layer: In a large bowl, beat together the cream cheese and sugar until fluffy. Add the eggs one at a time, followed by the sour cream, flour, vanilla, and salt. Pour this mixture into a separate parchment paper-lined 9" springform pan, and bake until the center is slightly jiggly (about 1 hour). Allow it to cool slightly before putting it in the freezer until it's completely cool and firm.
Prepare the Whipped Cream Layer: Combine the heavy cream, powdered sugar, and vanilla in a bowl. Whisk them together until soft peaks form, taking care not to overwhisk.
Assemble the Cheesecake: Place the frozen cheesecake layer on top of the red velvet layer. Spread the whipped cream on top of the cheesecake. If you have a decorating tip, you can create little dollops along the edge for decoration. Sprinkle some red velvet cake crumbs on top for garnish, and your delicious red velvet cheesecake is ready to serve!
