Billy's Botanicals Serving Richmond Hill, GA and the surrounding areas with aquaponic produce, organic gardening, flowers, and local seafood processing. Everybody loves the fish!

Our mission at Billy's Botanicals is to create a food production company that provides Savannah and the surrounding areas with fresh, sustainably raised fish and aquaponically grown produce. We join the efforts of millions who are dedicated to local, organic, and environmentally friendly farming practices. Billy and I have relocated from Richmond VA to Richmond Hill GA to start Billy's Botanicals

on a commercially viable scale. We both graduated Virginia Commonwealth University and continued to bartend because jobs were sparse through the recession. To quote Jane Fishman in her piece for the Savannah Morning News, we had to get "creative." We had always practiced aquaponics. Billy even had an entire system set up in our laundry room! It was time for us to forge a living doing what we were truly passionate about. The industrialized food system is not meeting the basic needs of it's consumers. Rather than focus on quality, they are driven by cost cutting and mass production. Miles of land stretch devoted to rows of genetically modified mono cultured super crops laced with pesticides. Huge ships run along our coastlines over fishing and polluting our water sources. This model of food production has not promoted efficacy, health, or sustainability. Billy's Botanicals uses innovative fish farming practices merged with hydroponics to raise fish and produce. The water from the fish is diverted and ran through our troughs where a large variety of plants grow. The plants are fertilized by the nutrients the fish create and in turn, filter the water. This symbiotic relationship between plants and animals works in harmony of nature, not in spite of it. We currently have a smaller system set up that house about 2000 tilapia and 5 troughs. We are nearing the completion of our greenhouse, that will house a larger system with far more plants and about the same amount of fish. We have had a lot of success at Forsyth Farmers market in Savannah where we started as vendors in March of 2014. We have gotten great feedback from our customers. This is a thrilling start for us and we can't wait to be in full production.

Hurricane season is officially here. The storms are part of life in coastal Georgia. The pines bend and we have been blessed that our home has held.

What we fear is a water table that can feel like it wants to swallow us whole: a bad rain fall that flows from some areas and inundates another. So when the rain is gone, the water creeps in and swells, and doesn’t go away.

Our beloved farm definitely needs a land rework within the context of our own 5 acres. We are hoping the work GDOT has done on our highway will alleviate the overwhelming amount of water we take on.

We are super excited to announce the stars have aligned and we were able to score at 1965 Case 580 Backhoe off Facebook marketplace. She’s no frills, she is loud, and she is old. But she hums like my Grandpas old truck and is ready to work. We cannot control mother nature, but we can respect and prepare for her as much as possible.

The Garden has spoken! It’s formally Summer in the South…

This week’s stars of the farm are:

💜 Passion Flower (aka “Maypop” to us Southerners) — one of the most fascinating native plants around. These whimsical blooms don’t just look otherworldly; they’re an important food source for pollinators and eventually produce delicious tropical-tasting fruit.

🌸 Dahlias — bold, beautiful, and showing off as only dahlias can. These blooms wait patiently through spring and then absolutely steal the show once the heat settles in.

🌶️ Pepperoncinis — crisp, tangy, and thriving in our summer sunshine. Whether you’re tossing them on a sandwich, chopping them into a salad, or pickling them for later, they’re a perfect reminder of why eating seasonally tastes so good.

One of the greatest gifts of eating with the seasons is that nature does all the planning for us. When we choose what’s fresh and local, we’re enjoying produce at its peak flavor, supporting local farms, and staying connected to the rhythms of the land that feeds us.

Summer isn’t about finding strawberries in December or pumpkins in May—it’s about celebrating what’s thriving right now. It’s passion flowers climbing fences, dahlias bursting into bloom, peppers soaking up the sunshine, and gathering around tables filled with food grown close to home.

As we welcome the start of another Southern summer, we hope you’ll slow down when you can, enjoy the longer days, support your local farmers, and savor all the incredible things growing around us. Stay cool. Stay safe. Drink your water. Check on your neighbors. Take care of one another.

These curly, twisting shoots are the flowering stems of hardneck garlic, harvested early so the plant can put all its energy back into growing beautiful bulbs underground. They’ve got a fresh, mild garlic flavor somewhere between garlic, scallions, and spring onions — perfect for pesto, grilling, roasting, pickling, or tossing into just about anything savory.

We also love them for how wonderfully strange they are. Their wild curves and sculptural lines lend themselves so well to unique and structured floral design. We thank our resident florist, for sparing a few for the market table. As you can see, our beautiful neice was carrying around a nice bundle of bouncy scapes in her wedding bouquet.

At Billys Botanicals, we’ve always believed there’s something special about growing things that nourish both the table and the soul — beautiful things to eat, and beautiful things to look at, all from the same earth. Come see us at as we have so many beautiful, edible things!

Each order will have their own custom tag for a special message directly to the recipient. Please fill out the form below to order. Our aquaponic greenhouse is in a strong production cycle right now, with multiple varieties of lettuce, leafy greens, and culinary herbs rotating through the system.

Aquaponics functions as a closed-loop system where fish-derived nutrients are converted by nitrifying bacteria into plant-available forms of nitrogen. This allows for continuous plant growth in water rather than soil, with minimal external inputs and efficient resource use. The system operates using organic, all-natural processes, supporting a sustainable method of food production without synthetic fertilizers.

The result is a steady, predictable rotation of greens and herbs for our restaurant, market, and Billys Bag customers.

Our foraged ramp push has officially begun! Thanks to those late snowstorms, the season took its time—but our mountain friends have finally descended and they are beautiful.

No morel mushrooms just yet, but the ramps are coming in strong and full of that wild, spicy/garlicky goodness we wait all year for.

fam — we’re on our way but running a little behind this morning!

Billy had a tire blowout on the trailer en route (because of course he did), but he also pulled an all-nighter getting everything ready for you — including some gorgeous fresh snapper that was processed just hours ago.

It’s that time of year yall! Come and get them at Soft shell crabs aren’t a different species—they’re Georgia blue crabs that have recently molted. For a brief window, their shells are tender enough to eat whole, which is why you get that perfect combination of crisp exterior and rich, almost buttery interior.

It can be an intimidating ingredient to work with initially, but a light batter and fry makes the perfect meal. If you prefer to leave it up to the experts, Chef at is plating them up this weekend (pictured).

On the subject of local seafood, we are unfortunately out of shrimp. They are out sh*****ng, but as with all things food, success is never guaranteed. We hope to have more next week.
