We had a great time in Rockport at A Taste of the Coast for Hill Country Hope. Lots of great folks came together to raise money for the families devastated by the floods in July. We were proud to be a part of it.

LONE STAR OYSTER TEXAS SIX SHOOTER

Sweet, smoky, spicy and saline- this shooter captures the wild soul of Texas in one shot! Best enjoyed ice-cold, with friends. A toast to the wide skies and bold taste of Texas!

One dozen Mermaid Tears oysters
1 C Ruby Red Grapefruit juice
1-2 T pickled jalapeño juice
1-2 T Texas wildflower, honey
2 T Texas 1015 onion, minced
1/2 tsp mesquite smoked salt
Chopped fresh herbs to garnish (cilantro pictured)
Yes, that’s a Tajin rim!

1. Mix all ingredients except the oysters and a small bowl
2. Taste for seasoning and adjust accordingly
3. Spoon over freshly shucked Mermaid Tears on the half shell and slurp down immediately

We had the absolute pleasure of taking , and his team, out to our farm and talk about Texas oysters, oyster farming, and Mermaid Tears.

We had a few storms pass through but the sky cleared up and we had a beautiful day on the water.
