Garlic Scape Pesto
I just harvested most of our scapes this morning. Brought them home and decided to make a scape pesto that I will be using in a pasta dish tonight!

Scapes are the sprouting/flowering part of a garlic plant. When they have made a complete curl, you snip them where they emerge from the main stalk. They taste like garlic and can add a little spice to your life!

Wash them, snip the tops off and any woody parts on the base, give them a rough chop and toss 1 C into the food processor. Add 1/3 cup nuts (we have a pine nut allergy so I used almonds—smoky almonds bc when you don’t have what it calls for you improvise.) Add 1/2 cup of freshly grated parm and 1/2 c olive oil, 2 T lemon juice and a pinch of salt. I omitted salt bc my nuts were salted. Give that food processor a whirl and watch the magic happen. Recipe says to add nuts and scapes, blend, add all other ingredients except oil, blend and then gradually pour in oil while processing. I am BAAAD at following directions. Mine turned out great though.

Scapes are the curly-Q part of the garlic plant that you harvest as soon as it makes a full loop. This triggers the plant to send the energy to the bulb vs the scape. These delicious greens can be used like garlic to flavor your dishes.
