The Holiday Issue featuring Gingerbread recipes and other delicious desserts is coming this week. Stay tuned for recipes to use like this one by Dole Pineapple:
Caramelized Pineapple Baked Brie

• 2 tablespoons butter
• 1 can (20 oz.) Dole Tropical Gold Pineapple Chunks, drained
• 1/4 teaspoon finely chopped fresh rosemary
• 1 tablespoon honey, divided
• 1 package (13 ounces) round brie cheese
• 2 tablespoons chopped roasted salted pistachios

Instructions:
Heat butter in skillet over medium heat. Add pineapple, rosemary and honey, stirring 6 minutes or until pineapple is golden brown. Line a baking sheet with parchment paper. Cut the top rind off the brie and discard, placing the remaining portion on the parchment paper.

Spoon pineapple mixture over the brie. Bake at 350 degrees F. for 10 minutes. Remove from the oven and drizzle with the remaining 1 teaspoon of honey before garnishing with pistachios.

From the moment I stepped out of the car to dine at Sombra Mexican Kitchen, Ridgeland, MS, the aroma drew me in. A lovely patio, super-friendly staff and delicious food made the evening perfect. The Queso Blanco dip with house-made chips? Incredible! The sizzling fajita combo with perfectly grilled meat was spectacular! There was so much food, it covered the table! And for dessert, warm sopapillas with ice cream and caramel drizzle. It was enough for four people! High-end feel, budget-friendly portions, and a great vibe for date night or casual dinner. Definitely worth the drive!
