Surprise!! We don't just sell beef...

As much as we love our beef, we have pretty amazing chicken too🐔
Our birds are pasture raised right here on the ranch. Not only are they excellent bug control for our pastures, they fertilize naturally too! But best of all, when their lifecycle is completed, they make extra tasty dinner.🍗

Here at MFPM, we utilize as much of the bird as possible. Our supply includes the usual drumsticks, wings, and breasts but we also have the more exotic options of liver, hearts, and gizzards! Whether you are a chef and are an expert at making coq au vin, or you are planning a party and need the perfect bite size wings or a stay-at-home mom dishing up a hearty chicken pot pie for your family, we have you covered in the meat department!

My personal favorite and go-to chicken recipe is Chicken Fajitas. When Cole and I were first married, I was pretty new at cooking and the only thing I knew how to make was grilled cheese sandwiches and chicken fajitas. For the first year of our marriage, one of those two was usually dinner. Amazingly enough, Cole still likes fajitas, even after a steady diet of them for an extended amount of time😅 I have perfected my fajitas over the years (as well as expanded my cooking repertoire😉) and he often requests them.

Holly's Chicken Fajitas
1 large chicken breast, sliced into long strips
1 cup sliced onions
2 cups of mixed sliced peppers
1 cup sliced mushrooms

Pan fry chicken strips in oil or butter. Remove from pan and stir fry peppers and onions in drippings. Sprinkle with fajita seasoning or seasoning salt. Add mushrooms and return chicken to pan when peppers are almost finished cooking. We like our peppers to be just barely crunchy, not limp but you can make according to your family's tastes. Remove from heat and serve with grated cheese, sour cream, and tortillas (homemade are the best!) Serves 2-3 people.

Today lets talk STEW MEAT

Since we are doing all things warm for cold weather eating, it would be a shame to leave out this versatile cut of beef. The name "stew" comes from the process of simmering small pieces of meat for a length of time until the meat is tender. With this in mind, stew meat is best used for recipes that involve long slow cooking times, so think crockpot, deep dish or the obvious, stew pot. Stew meat is typically taken from the tougher connective tissues of beef such as chuck or round. It is too tough for a quick pan fry but once braised in stock, it becomes melt-in-your mouth tender. You can never go wrong with a good old fashioned meat and potatoes stew, simmering on the stove all day. But there are plenty of other fun ways to use stew meat. Lets take a look at a few ideas...

Chili- swap out ground beef for stew meat for a step up in the chili world
Beef Bourgiurgnon- a French dish that is basically stew, except instead of using stock, red wine is the braising liquid of choice
Stroganoff- (One of our family favorites!)- brown the meat and add your favorite veggies (we like onion and cremini mushrooms) and stir in sour cream and cream cheese. Serve over buttery egg noodles!😋
Potpie- Instead of chicken, use stew meat. Toss meat chunks in flour prior to braising and you have yourself the perfect pot pie filling
Enchiladas- Braise your stew meat in vinegar and create the perfect fall apart meat for beef enchiladas.
Stir Fry- Braise your stew meat in tomato sauce, apple cider vinegar, and spices. Serve over rice or noodles👌

This time of year is often called "flu season" due to the many illnesses that crop up and take over our daily lives. We have had our fair share of said sickness around the ranch this winter but one way we have found to prevent and recover is today's recipe idea.

Bone Broth!!
It is multi use, often found in soups, sauces, and gravies, But more recently it has come back to the limelight for its incredible health benefits. Bone Broth is high in vitamins and minerals, fights inflammation, improves joint health, aids in weight loss, helps heal the digestive system, and can improve sleep and bone function. In other words, it is a power house in the health world.
Bone Broth is very simple to make with as many or little ingredients as you desire. There are many recipes out there, but the following is my favorite as it is so easy to tweek depending on the ingredients I have on hand.

Large pot
1 gallon of water
2 tbsp. of apple cider vinegar (brings out the important ingredients in the bones)
2-4 lb. of bones (soup bones, oxtail, knuckle bones, or a mixture of all)
salt and pepper to taste
Place all ingredients in a pot and bring to a boil. Reduce to a simmer for 12-24 hours. The longer you let it simmer, the more flavorful it will become. Once the simmering process is done, strain off the bones and allow to cool. Fresh bone broth should be stored in the refrigerator and used within 5 days, but it also freezes or pressure cans well for longer preservation time. For more flavor and even more health benefits, vegetables such as onions, carrots, parsnips, leeks, etc. can also be added. I will typically strain the vegetables off once the cooking process is done for easier use in sauces and gravies. But if you are looking for a ready made soup, you can leave them in and just remove the bones.
Bone broth is not only simple and healthy, it is delicious and well worth the time to make. Even if you are not a fan of drinking it straight, it is still beneficial used in soups and sauces.

Today’s featured recipe would have been better suited for yesterday’s Super Bowl Sunday, but it can still be enjoyed anytime you get a hankering for

Beef Nachos
Brown 1 lb. ground beef and season with seasoning salt or taco seasoning. Remove from pan and sauté onions and peppers in the drippings (a mixture of bells and jalapeños give a nice kick). Spread tortilla chips in a broiler safe pan and sprinkle with cheese. We like a mixture of mozzarella and cheddar. If you are looking for extra spicy, add a little pepper jack as well. Next spread your browned beef on top of the cheese. Add sautéed onions and peppers and top with more cheese. Place in the broiler for 3-5 minutes. Watch carefully that the chips do not burn. When the cheese is melted, remove from the broiler and top with sliced black olives, green onions, salsa, diced tomatoes, sour cream, and our family’s favorite, relish (don’t knock it until you try it!) Serve and eat while watching the football game or enjoy on family game night.

As our daylight is gradually sticking around longer each day, we find ourselves out and about a little later in the evenings. After a long cold day horseback, it sure is nice to come home to a warm dinner, ready to eat when you walk in the door. Bring on our star for today:

Melt-in-Your-Mouth Chuck Roast
This recipe is simple to prepare and even easier to eat. All you need is a crockpot and a hefty Middle Fork chuck roast. To prepare, place your completely thawed roast in a pan and sear all sides. A nice even sear helps secure the flavors in the meat as it slow cooks the rest of the day. While your roast is searing, slice 1 large onion and place in the bottom of the crockpot. Mix 1 tsp. of each of the following: salt, pepper, fresh minced garlic, and za'atar (if you don't have this amazing Middle East seasoning, you should get some! Or you can substitute with your favorite herbs such as basil, oregano, thyme, etc.) Rub the roast with your seasoning mix and place in the crock on top of the onions. Pour approximately 1 cup of beef broth and 1 1/2 tsp. of Worcestershire sauce over the roast and onions. Set your crockpot for 10 hours on low. Not only will you have a ready to eat main course when you come home in the evening, your house will smell amazing!!
