Visited good friends Dave and Carol Hamilton at their sugar house today. My dream evaporator someday only smaller. 🤞🏻The weather definitely did not cooperate for us this year, but we still have plenty of syrup for sale at the sugar house. 🍁

2019 Indiana Maple Syrup Association annual meeting today in New Castle. With Jared Brickley, lots of good information. Met a young couple who shared business ventures (bourbon, cinnamon and coffee maple syrup infusions. They also make maple syrup cotton candy, it’s delicious! Things I am definitely trying soon.

🍁Today we canned 26.5 gallons of syrup, the latest we have ever started
our canning process. This run is very light and deliciously beautiful! It will probably be one of the lowest producing years compared to last years highest at 158 gallons. Hoping for another run or two next week. 🍁🤞🏻🍁

Tomorrow we will top the 100 gallon mark! It’s been several years since it’s been this good and it’s not over yet. We now have 3 grades of syrup available.

With below freezing temps at night (perfect for syrup making), we re-tapped the holes and the sap is running. The guys have collected several hundred gallons of sap yesterday and today. We probably will be boiling the next couple days.
