Just thought I'd take a few minutes to try to help new (or existing) folks understand a little about exclusively GRASS FED beef and GRASS FED - GRAIN FINISHED beef. Remember every small producer does things differently but these are some straight answers to questions I hear often.

GRASS FED beef is typically 28-48 months of age (or older) before they are big enough and have enough finish (fat) on them to process.
vs GRASS FED - GRAIN FINISHED calves are between 10 months and 24 months of age.

It only makes sense that older isn't as tender, has had more de-wormer and has had additional annual vaccines needed for good health.

How to tell if you're really getting GRASS FED exclusively, is a site visit to the farm. Open your eyes! Is there lush grass or is it a dry lot with dry hay or anything in between? Another tell tale sign is the COLOR OF THE FAT in the finished product. If it is yellow or has a significant yellow tint then its grass fed exclusively. If its white its grass fed - grain finished.

Here are a few questions I suggest you ask.
1. How old is the animal at the time of processing?
2. Are your animals born on your farm or are they purchased for others or a cattle sale barn?
3. What is the typical live weight of the animal at the time of processing?
4. What is typical hang weight (carcass with no head, no hide, no guts and nothing below the knee) of the animal once processed?
5. How long do you typically hang your beef before its cut?
6. Does your price include the cost to process the animal?

At Shonderoc - Beef and Cattle all of our calves are born on our farm. Our steers are grass fed and grain finished. The calves are weaned (taken off their mothers and mothers milk), placed in a pasture with excellent forage 24/7 and are able to come in and out of the barn 24/7 and enjoy locally produced grain (three grains only) under fans daily at their leisure. No fans during the winter though. They are wormed and vaccinated for Blackleg (a deadly disease). We typically process our steers at 12 months of age. Occasionally, we have some that finish sooner (10 months) and sometimes we have some that are (14-15 months) of age. We are blessed to have a state of the art processing plant that will hang/dry age our beef for 21 days, shrink wrap and label the cuts of beef. Tallow is available at no additional charge.
