This is a question I asked the HR instant support: when would you close the gas ballast (the black k**b on the top of the vacuum pump with the O and C inscribed on the pump)? This is the reply I received:

You would close the gas ballast on a Harvest Right oil vacuum pump during the vacuum stage of the freeze drying process. The gas ballast is typically left open during the initial stages, such as pre-cooling and freezing, to allow moisture to escape and prevent condensation in the pump. Once the vacuum is established and the freeze drying process is underway, you can close the gas ballast to maintain optimal vacuum levels.

Do any of you ever close the gas ballast when you are freeze drying?

Looking forward to being at the Natchitoches Farmers Market tomorrow. I’m bringing some new items to go along with my homemade sweet crispy, Southern Heat, and dill pickles; salsa, jams and jellies and many different freeze dried candies and snacks and homemade lemonade.
