First post and welcome to Rochester Organic Wagyu. What do you get when two farmers combine the knowledge of Organically feeding a dairy herd and the best meat in the world, Wagyu?
Simple answer a cheaper way to enjoy the great marbling and unique flavor of Wagyu that has is born, bottle fed, raised and finished on all organic feeds.
Although we have been selling the bottle calves that we are producing from this partnership for nearly two years, we can't sell them all. Those that don't get sold go into our customized feed program, borrowing tried and true finishing programs from some of the top Wagyu producers like Rainier Valley Wagyu.
Now as those first calves that didn't get sold as bottle calves are approaching 2 years of age, we are starting our newest journey of producing great F1 (50%) Wagyu beef for you to enjoy by the 1/4, 1/2 and whole animal share.
We have used some great sires to produce these calves, including the Sanjiro 5, the AA10 bull Hira John and a great young almost all Tajima newcomer bull produced locally by a local long time Wagyu breeder as our clean up bull.
All of the animals are born, raised and finished on the organic dairy which means nothing but certified organic feed for them and organic pastures. As they were not carried in the organic herd book, they cannot be sold as "organic" but they are, without the certificate.
