Growing up with eight siblings and a mother who was born in Italy, we never ate boxed pancakes.
Sunday mornings meant pancakes made from scratch. ❤️
I can still picture my mom in the kitchen, making a big batch for all of us. She’d start by sifting 2 cups of flour into a bowl, then add a teaspoon of baking soda and a tablespoon of baking powder. In another bowl, she’d beat 2 eggs really well, then stir in 1/2 stick of melted butter and 3 cups of buttermilk. She’d mix it all together, and just like that, we had pancake batter.
Nothing complicated. Nothing from a box. Just good, simple ingredients.
Now I make these same pancakes for our grandchildren, and I love that a little piece of my mom’s kitchen has carried on to another generation.
Sometimes I use Italian flour, but this morning I used Janie’s Mill | Stone-ground Organic Flour organic stone-ground flour, and I have to say, this batch was extraordinary. The flavor was just so good.
There really is something about using quality ingredients and making things from scratch. No boxed ingredients, no shortcuts — just flour, eggs, butter, buttermilk and a little love. And you can absolutely taste the difference.
Some recipes are really memories in disguise. 🥞❤️
