Trinity – Stronghold Meadery
ABV: 18% | Dry | Pyment – Cabernet Franc, Cabernet Sauvignon, & Merlot with Honey
Trinity is a mead of reverence and power — a pyment that unites the noble heritage of Bordeaux grapes with the ancient essence of honey. At 18% ABV and completely dry, it stands as a fortified expression of balance, depth, and devotion, a wine built for ceremony yet fully at home in moments of quiet contemplation.
On the nose, Trinity reveals an austere yet commanding bouquet: dark currant, blackberry skin, and dried fig, layered with the faintest echo of honey’s floral undertone. The aromatics are precise, structured, and dignified — announcing the wine’s intent before a drop touches the palate.
The first sip is bold, structured, and unapologetically dry. The power of Cabernet Sauvignon provides firm tannins and a backbone of black fruit; Cabernet Franc adds a lifted, herbal edge; and Merlot softens the structure with a whisper of plum and warmth. The honey, fully fermented to dryness, offers no overt sweetness — only a silken texture and depth that ties the trinity of grapes into a single, unified voice.
The body is full, with commanding presence, and the finish is long, contemplative, and warming. Notes of black fruit, leather, and a faint echo of honeyed warmth linger, leaving the impression of both austerity and grace.
Traditionally used as a communion wine, Trinity carries with it a sense of ritual and gravity. It is a mead meant to be shared in unity, but also one to be savored in solitude, where its strength and dryness can be fully appreciated.
Pair Trinity with roasted lamb, aged cheeses, or enjoy it as a solemn standalone pour. This pyment is more than a drink — it is an offering, a unification of grape, honey, and spirit into a singular expression of devotion and strength.
