Traditional Pasta Fredda is a quick and easy cold dinner salad, perfect on a summer day! The stars of the show were the cherry tomatoes from our Sunscape Farms CSA ½ Share and the farfalle I found at Red Bird Market. The rest was, canned Italian Yellowfin Tuna in oil, cubes of mozzarella, marinated artichokes, Kalamata, green and black olives, pepperoncini, olive oil, some red wine vinegar and pepperoncini juice, dried oregano and basil, black pepper and a drizzle of honey 😉

I came across Emeril Lagasse's reel (link below) about his mom's Portuguese Chicken Thighs in my feed, and immediately thought about making it with my Portuguese friend - and fellow Foodie - Grace! ☺️
Since I make my own CAJUN OBSESSION Blend, naturally, we used that. 😉 Other than having to brown the thighs in batches because we doubled the recipe, we followed it exactly, and it was incredible.
The onion, garlic and tomato were from Sunscape Farms, and we served it over some jasmine rice with Salty Bread 🤤
