2 Chicken Legs in Pineapple Sauce
Ingredients:
2 chicken legs (thighs and drumsticks)
Salt and pepper to taste
1 clove of minced garlic
1/4 chopped onion
1 cup diced pineapple (fresh or canned, drained)
1/2 cup pineapple juice (fresh or from the can)
1 tablespoon soy sauce
1 tablespoon honey or brown sugar (optional)
1 tablespoon white or apple cider vinegar
1 teaspoon cornstarch (optional, to thicken)
Vegetable oil
Instructions:
Brown the chicken:
Season the chicken legs with salt and pepper. Heat a little vegetable oil in a large skillet over medium heat, then sear the chicken on both sides until nicely browned. Remove from the pan and set aside.
Prepare the sauce:
Using the same skillet, sauté the chopped onion and minced garlic until soft and lightly golden. Add the diced pineapple, pineapple juice, soy sauce, honey, and vinegar. Let the mixture simmer for about 5 minutes to blend the flavors.
Thicken (optional):
If you prefer a thicker sauce, dissolve the cornstarch in a small amount of water and stir it into the pan. Cook, stirring, until the sauce thickens.
Cook the chicken in the sauce:
Return the chicken legs to the skillet, coating them with the sauce. Cover and cook over medium-low heat for 25 to 30 minutes, turning occasionally, until the chicken is fully cooked and tender.
Serve:
Serve hot with white rice, mashed potatoes, or a fresh salad.
