If you know Arabs (especially Egyptians), you know we love fava beans.

Fava beans have been cultivated for thousands of years and are enjoyed across many cultures. In the Middle East, they're often cooked into hearty stews, sometimes with meat and sometimes in a yogurt-based broth. Across East Asia, fresh favas are stir-fried or steamed, while in South Asia they're added to curries and vegetable dishes. In parts of South America, they're enjoyed boiled, stewed, or incorporated into simple, nourishing meals.

This week, we’re harvesting a beautiful mix of red and green mustard greens—including mizuna, frill, miz America, red giant, tatsoi, and wasabi mustard.

Each variety brings something different. Mizuna is a Japanese variety with a slightly peppery and spicy taste, tatsoi is tender and mild, while red giant and wasabi mustard carry more spice and depth. Together, they create a mix of textures and flavors that feel vibrant and alive this time of year.

Healthy soil grows healthy food. But not all soil is the same.

Here in New York’s Black Dirt Region, we’re growing in a rare type of soil formed from ancient marshland over thousands of years. This dark, rich earth is naturally packed with organic matter, holding nutrients and moisture in a way that makes it incredibly fertile.

Kale is one of those plants that carries us through changing seasons. It handles the cool of spring with ease, and continues to grow steadily as the days warm.

We’re harvesting a beautiful mix right now: Curly Kale, White Russian, Winterbor, Rainbow Kale, Scarlet Kale, Dazzling Blue Kale, and Lacinato (aka Toscano aka Dino) Kale.

Fresh from the field, it’s both hearty and tender. It can be enjoyed raw, lightly massaged into salads, sautéed, or added to soups and stews 🌿
