Harvesting the crop is only half the job. If you’re planning to keep some of it around for winter, what happens during the next week or two can matter just as much as what happened in the garden.

Garlic and onions need time in a warm, dry, airy spot for their outer layers and necks to dry down. Potatoes are almost the opposite—they cure best cool, dark, and humid, giving little cuts and harvest bruises a chance to heal. Sweet potatoes like it downright warm and humid, and that curing period can make a noticeable difference in both storage quality and flavor.

Then there are winter squash and pumpkins. Give them several warm, dry days with good airflow and the rind has a chance to harden before they head into storage.

The important part is that “curing” doesn’t mean doing the same thing to every crop. A setup that works beautifully for garlic can be completely wrong for potatoes or sweet potatoes.

A little patience between the garden and the pantry can mean the difference between produce that keeps for months and a storage bin that starts going downhill way too soon.

I won’t be able to make it to Rockton River Market market tonight but will be at the Roscoe market on Sunday. I’ve got green beans, poblanos, green peppers, jalapeños, cucumbers, lettuce, summer squash, tomatillos and a couple new house plants!
