One of my favorite parts of catering is simply watching people enjoy the food. 💛

This sweet young lady may have been tiny, but her plate was BIG! 😄 Smoked chicken Alfredo, glazed ham, garlic toast, and she was still going back for more.

It reminded me of how a grandmother smiles while watching her family enjoy a meal she’s spent hours preparing. There’s something special about seeing people genuinely enjoy food made with love.

Just a small glimpse from last Saturday’s event. Trust me, there’s so much more to come. 👀✨

In May 1865, African American residents of Charleston gathered to honor Union soldiers who had died in a Confederate prison camp located at the former Washington Race Course. The soldiers had originally been buried in a mass grave. Black laborers exhumed the bodies and gave them proper burials.
Then, on May 1, 1865, thousands of Black residents including children, teachers, ministers, and Union troops participated in a procession to decorate the graves with flowers, sing hymns, pray, and honor the fallen soldiers.
Many historians consider this event one of the first large-scale public observances that reflected the spirit of what later became Decoration Day and eventually Memorial Day.

😂 I know y’all probably saying…

“Kisha talked all that about the catering, but never showed us the FOOD!” 😭

Listen… when you’re cooking from scratch, transporting food safely, setting up, serving, and making sure every detail is right… sometimes capturing content becomes the LAST thing on the list.

But anytime I do have a moment to grab pictures or videos, I make it my business to do it, and I always pray 🙏🏾 time allows it because the presentation matters too. ❤️

Don't overlook the bone tips when it comes to Seasoning and/or Sauce. It's almost guaranteed that a person who enjoys Pork Ribs will either lick their fingers or the bones.

Part 2 ****The Flat Tire Incident has shone a light on some real truths...***
This is what people don’t always see behind catering.
We couldn't just concern ourselves with getting to safety. Our food needed to get to safety as well. People asked if we lost food. Absolutely not. Why? Because everything was packed correctly, stored safely, and kept at proper temperatures. Frozen items stayed frozen. Cold items stayed cold....no shortcuts.

That same standard applies to my food.

My business was built on quality—not convenience.
》I cook from scratch.
》I process my own ingredients.
》Imake my own sauces.
》I create my own dressings.
》I trim my own meat.
》My jerk seasoning? K'onfections.
》My all-purpose seasoning? K'onfections.

That’s the only way I know how to cook.
People have always told me my food tastes like their grandmother made it, and it is because homemade food feels like home.

Could I cut corners? Yes.
I could buy pre-seasoned meats.
I could buy bottled sauces.
I could use more processed ingredients.
I could make things faster and cheaper.
But then my food would be no different than fast food convenience. I refuse to serve people something I’m not proud of.

I’m not expensive.
Quality food prep is an investment.
