This is what community looks like!

A big thank you to Rogersville Walmart for inviting the Cherokee culinary program to cater their Thanksgiving employee lunch. Our students worked incredibly hard to prepare turkey, ham, stuffing, and rolls for more than 200 people.

Everything was made in-house, of course, with lots of love and effort. This was a wonderful experience in large-scale production.

Events like this are what keep our program thriving and provide students with real, hands-on kitchen experience,
a skill that will last them a lifetime, whether they use it in the industry or at home, feeding their families healthy meals.

Culinary 3 was incredible this week!
They learned so much, from breaking down a chicken to cutting a beautiful airline breast, and they even mastered setting a formal table. They ran the hotline like pros, took great care of customers, and stayed positive and flexible through every challenge.

This week in Culinary 2, students explored the art of plate presentation. We discussed contrast, height, texture, selecting the right “canvas,” and how garnishes can enhance the flavor of a dish.
Students experimented with a variety of elements, powders, syrups, compotes, grated solids, crumbs, and more, to design their own plated brownie or honey bun (which they then got to eat!). Next week, they’ll put their skills to the test by plating a dish they prepare from scratch, all while being timed.
Students also made cheesecake and helped design the plate presentation for the ROTC senior lunch!

Mrs. Cope’s AP Biology class has been studying yeast and fermentation. To make the lesson more relevant, her students visited the culinary classroom to apply their knowledge in a hands-on way. After all, what better way to learn about yeast than by baking yeast rolls?

Come out to Cherokee's Bonfire this Thursday.

We will start the kickball game at 6:00. We will play the best of 3 games or until time permits. Then the fire will be lit at 8:00 . We ask for all parents to pick up students by 8:30.

The Cherokee Culinary Bake Shop has leveled up for fall with AMAZING pumpkin rolls, spookie chocolate bark, creepy cookie spiders, very mummy cake pops and more!!

Culinary 3 has been working hard keeping the bake shop stocked with delicious treats and maintaining our window display ! 

After culinary 2 aced their pop quiz on sauces, they helped out by decorating the pumpkins for our window display.

So don’t forget to stop by for a spooky sweet treat Tuesday and Thursdays at the culinary room!

This Week in the Cherokee Culinary Kitchen… WE MADE APPLE BUTTER! 🍎

Here’s how each level contributed to the process:

Culinary 1 focused on knife skills and safety. Students explored six different types of knives, learning their unique features and proper usage. They then applied their knowledge by peeling and dicing a lot of apples, putting in plenty of hands-on practice to prep for the apple butter.

Culinary 2 dove deeper into sauces, focusing on thickening techniques like roux, slurry, and reduction. They used their understanding of reduction to help cook down the apples into rich, flavorful apple butter.

Culinary 3 explored everything butter! They churned their own fresh butter, then used the byproduct, buttermilk,to bake homemade biscuits, the perfect match for our apple butter.

Each class had the opportunity to participate in the Applebutter making process .

A BIG BIG thank you to the fire science program for building and keeping the fire going and even helping us stir!!! And to the Appalachian studies class for sharing the history of apple butter with us. 

This was a wonderful and fun experience for all involved! And to top it all off we sold EVERY JAR! Thank you to the students and staff of Cherokee for supporting our program!
