Endless Mountains Maple The Russell Century farm was established in 1796, and producing maple products is a long-standing part of our history.

We use pure, all-natural maple syrup to make our maple candy, maple cream, and a variety of other maple treats.

Apple Feta Orzo Salad with Endless Mountains Maple Balsamic Vinaigrette

Ingredients:
1 cup dry orzo pasta
1 apple, diced
1/2 cup crumbled feta cheese
1/3 cup dried cranberries
1/4 cup walnuts, chopped
2 cups baby spinach
4 tablespoon Endless Mountains Maple balsamic vinegairette
Salt and black pepper to taste

Directions:

Cook the orzo according to package instructions until tender. Drain and rinse with cold water.
In a large bowl, combine cooked orzo, diced apple, feta cheese, dried cranberries, walnuts, and baby spinach.

Pour the dressing over the salad and toss gently until evenly coated.

Chill for 10 minutes before serving for the best flavor.

The Old Farmer’s Almanac headquarters in New Hampshire is surrounded by maple trees. Wherever you look, there are sap buckets on those trees—at the local school, in neighbors’ woods, and along the road. If you drive by a sugarhouse and see steam billowing, sap is being boiled to produce maple syrup! 🍁

Now, if you’ve never tasted real maple syrup, there’s no way to describe its fresh, complex flavor with its hints of caramel. High-quality maple syrup is called “Grade A” and comes in four color classifications: Golden, Amber, Dark, and Very dark. The Maple Syrup Industry decided to develop uniform standards, replacing three different grading systems (Canadian, USDA, Vermont) so that the collectives would all be on the same page, no matter the state or country.

Fun Fact: The color does not reflect quality; it reflects the taste of the maple syrup and, often, when the tree was sapped. In general, the sap is lighter earlier in the season when the sap is new and it’s still cold outside with snow on the ground. As the season goes on, the sap gets cloudier, darker, stronger, and richer. However, the color also depends on temperatures, soil, snow, and other factors. One year in New Hampshire, we had a couple of warm spells, and the sap started to turn dark after only six sugaring sessions! 🍁
