EASY PICADILLO WITH A ROASTED POBLANO "CREMA"
NEED:
1. 2lbs Ground beef(typically 85/15)
2. 1cup chunked potatoes, carrots, cabasitas (or zucchini/squash who cares).
FOR THE SALSA:
3. 5 Romas
4. 1 small onion
5. 2-6 seranos (or jalapeno)
6. 4 or 10🤔 cloves garlic
7. 1 big tbsp tomato bouillon
8. 2/3 Bay leaf
9. 2 tbsp. Cu**in, chilli powder, oregano
CREAMA:
10. 2 Roasted panlanos (rub with oil and throw them in your air fryer till they're nice and dark)
11. 1 tbsp minced garlic
12. .5 cup each sour cream and mayonnaise
13. 1/3 cup lime juice
STEPS: Have everything ready to go
1. Over medium to medium high Brown your ground beef. As it gets almost Brown. Add the onion.
2. While the beef is going in your blender, add all the ingredients to the salsa. And puree
3. Once the meat is nearly done, pour in the salsa plus maybe a cup of stock (water will do)
4. Add in your potatoes, and carrots .cover the pan and simmer. Maybe 6 minutes or until potatoes are kinda tender
5. Add your squash and simmer 5 or 6 minutes till everything is tender and has come together.
You can simmer until desired thickness. Sometimes I like it runny sometimes. I like it thick.
Serve this immediately or leave it on the counter till you're good and ready. The sauce will continue to thicken.
Serve it with rice or beans or rice and beans. Lol I don't care if you have two starches I don't want to hear it. Three if you count the freaking carrots. Comfort food is not supposed to be healthy. It's supposed to be comforting:)
You can serve with corn tortillas traditionally. However, I personally think flour is better for sopping up the juice.
Top with the crema and anything else you feel like it lol. It's your freaking Taco. I love some Cholula!! My mom prefers to add fix slices of tomato.
I've been known to sprinkle Fritos. You do you!
