Grilled Coca-Cola Chicken Thighs Recipe 👇

INGREDIENTS 🛒
Chicken Thighs: 2 pounds (on SALE through 8/25)
Coca-Cola (not diet): 1 cup
Soy Sauce: ¼ cup
Ketchup: ⅓ cup
Garlic (minced): 3 cloves
Onion Powder: 1 teaspoon
Black Pepper: ½ teaspoon
Olive Oil: 2 tablespoons
Apple Cider Vinegar: 1 tablespoon
Paprika: 1 teaspoon
White Rice: For Plating
Mango Pico de Gallo: Fresh from Meijer Pico de Gallo & Mango Slices
Limes: For Garnish
(Double if you use the whole package of Chicken Thighs)

INSTRUCTIONS 📄
1. In a large measuring cup, whisk together Coca-Cola, soy sauce, ketchup, olive oil, garlic, onion powder, pepper, vinegar, and paprika.
2. Remove skin and trim fat to your preference on chicken thighs. Leave bone-in for better flavor and to retain moisture while cooking.
3. Pour half of the marinade (About 1 cup) into a large zip-top bag with the chicken. Seal and refrigerate for at least 2 hours or overnight (for deeper flavor). Reserve the other half (About 1 cup) for basting.
5. Chop up mango slices and combine with pico de gallo.
6. Remove chicken from marinade and shake off excess. Let it come to room temperature for 15 minutes.
7. Preheat your grill to medium heat, and lightly oil to prevent sticking.
8. Grill chicken for about 6 to 8 minutes per side, basting often with reserved marinade. Cook until internal temp reaches 165°F and glaze is sticky and caramelized.
9. Let chicken rest for 5 minutes before slicing. Serve over white rice. Garnish with Mango Pico and freshly squeezed lime juice.
10. Enjoy!
