2)Relish Catering – Are you celebrating a special event? Whether it’s a special family dinner or a formal dinner party, Relish helps you celebrate in style. We design our menus specifically for each event, taking into consideration seasonality, the event, and of course, the client’s desires.

3)Relish Cooking Lessons and Parties – These intimate gatherings allow Marcy to highlight a cuisine, an ingredient, a menu, or a specific technique for your group. Held in a host’s home or as a demonstration in a venue, cooking parties allow you to share a life-enhancing experience. From basic skills to advanced menu planning and cooking for your week, you can choose your preferred theme. Alternatively, book Chef Marcy for private lessons to hone your knife skills or other cooking techniques.

Feeling some Mexicali Blues as I look at the beautiful shots of at the beach for this week’s installment of ~ I can almost feel the warm breeze from the shore, wish i was there...
This week I went a little lighter with the meal. Poached chicken breast w/ roasted poblanos & white bean “chili” accented with a zippy apple jalapeño salsa. I love the warmth of the soup but the bright, limey, spicy, crisp salsa might be my favorite! Blaze on! 🔥 🍏 🌶

Today I am freeing myself of heavy Thanksgiving eating with this little soup and salad combo~ Arugula, Fennel & Honeycrisp 🍎 Salad w/Maple Lemon Ginger Vinaigrette. Butternut Squash Soup with Spicy Pequin Chili Pumpkin Seeds.I should wait to eat for but the flavors are irresistible! The zippy maple ginger dressing is so good with the salad. The spicy seeds are a perfect foil against the creamy butternut soup.

“~ Jic-A-Maid ~ Fun Dip” Catering gives me a chance to really connect with my hospitality roots and provide excellent smiling happy service. (well, smizing under a mask). A couple of weeks ago I had the pleasure of crafting an entire menu around beautiful rare tequilas. The dish featured here is something that was in my notebook for 3 years! The client wanted a blind blanco tequila tasting and I was able to play around with my Jicama “Jic-a-Maid” Fruity Fun Dip. Remember Fun Dip? “Take me around the world” sweet corn risotto + roasted summer gremolata : with corn, cherry tomatoes, leeks, basil & lemon zest. The risotto is decadently rich & creamy ~ so for a little contrast I played around with a loose interpretation of a summer “gremolata” which has a nice umami zing from the roasted Parmigiano tomatoes + lemon zest, bolstered with caramelized corn, basil and leeks (used in Betty Frost’s recipe).
This recipe is a nice blend of Italian technique and quintessential American summer produce ~ sweet corn on the cob. I learned to make risotto while visiting distant relatives in Piedmonte, Italy in the Summer of ‘98 (staged at kitchen in Perugia and travelled to Piedmonte for a long weekend). Coincidentally, before Italy, I was on European in Prague > Barcelona.
Those were the days ~ concerts in Europe and a summer/autumn in Italy. Happy I have a journal of that time to reflect on what the world can be. (and I know somewhere in there there’s a story about trying to get back on the train...)

I never knew that I wanted a “party barn” in Vermont but now I do! My wonderful friends hosted my family at their bucolic homestead last weekend ~ Vermont provided the perfect place have a safe getaway. My hosts have the most incredible property that dates to the 1800s (and the barn built in late 1700s!)

“Blaze On” kaleidoscope tomato tart ~ heirloom yellow “peach” and cherry tomatoes carefully layered, sprinkled with thyme, rosemary, Parmigiano, and Maldon sea salt. Baked in handmade pâte brisée shell. Beautiful tomatoes from 💛🧡♥️, my favorite tomato stand.

“My Sweet One” summer salad on repeat...Grilled Peaches, Arugula, Crème Fraîche, Crispy Ham, and a drizzle of aged balsamic. With this salad the dressing makes itself! When the components are tossed together ~the crème fraîche mingles with the balsamic and warm juices from the grilled peaches to create an a là minute dressing that is tart, creamy & sweet. The ham “crouton” is made by grilling a piece or two of ham to make it crispy (any ham will do: prosciutto, serrano, boiled, etc) For a vegetarian option - toasted sunflower seeds are also great here. After two weeks of the mimicking my menus... First say it to me satay and now grilled peaches...suspicious minds want to know- who is this mysterious Betty Frost of the organization? Her name sounds like an X-men or spy... and I wonder if she is delving into Relish Your Chef trade secrets?! Grilled peaches are my thing! Well done Ms Frost, your keen espionage is only matched by your culinary prowess. Until we meet again...
