The Classic Cuvée has been part of the winery since the very beginning. It's never been about chasing trends or making the biggest Cabernet in Napa. It's about balance, restraint, and building a wine that belongs at the dinner table as much as it belongs in the cellar.

Sarah Vandendriessche isn’t handed a checklist of varietals Elizabeth Spencer needs to make.

Instead, the conversation starts with what she and Jean-Charles actually want to drink. Which vineyards are producing fruit worth pursuing? What belongs alongside a great meal? Where can restraint make a wine more interesting rather than simply making it bigger?

That thinking carries through vineyard sourcing, blending, and every decision before a bottle reaches the table.

What makes a dinner memorable usually has very little to do with how perfectly the table was set.

It’s who sat next to you. The story that took twenty minutes to finish. The bottle everyone kept reaching for. The recipe you immediately asked for before leaving.

That’s also how we think about making wine at Elizabeth Spencer: not as the centerpiece of the table, but as part of everything happening around it.
