He tore apart an old broken down building and saved the roof and used that as the first sugar shack. My great grandfather and family would crawl into this tiny crammed shack and all surround a small stainless steel pan that he would cook in. r many years spending hours and hours of work to yeild very little syrup my grandfather decided it was time to build a new shack. Not far from the roof, Pep built the second shack and also built a much larger, modern style, evaporator. The new system was so much faster than the old one. He started using sheetrock buckets to collect the sap. We used this shack until 2003 to make our liquid gold for just the family and close family friends. In 2011 we wanted to get back at producing and Pep decided that it was time to build a new shack and get new equiptment. So we bought a new evaporater, all new taps and lines, new food grade buckets, and everything else it takes to make maple syrup. In our first season with the new gear we produced 75 gallons of syrup, the most we've ever made. In 2012 we decided it was time to start selling our product.
