This weekend I competed in the State Fair of Texas Creative Arts Baking Competition and took home 4th/Honorable Mention in the Yellow Cake category for my Lila Coco Chiffon cake. It is an Ube coconut cake and a filling that consists of a fresh coconut cream with fresh coconut meat shreds and a fresh coconut cream haupia. Finished off with a haupia chantilly and ube dust. The cake is a mess after spending 12 hours not refrigerated and banged around. 😂
