Fiddlehead Ferns are in season!! One of my fondest memories of my first line cook job was Morel Mushrooms filled with Goat Cheese then sautéed in butter with Fiddleheads! It totally felt like Northern California.

Corned Beef Time!!! Mine gets browned then braised in Beef Stock, Mirepoix, Mustard Seeds, Black Pepper, Bouquet Garni, 300 degree oven until you can smell it throughout your home. A few hours or more. Test for doneness.
