Prime vs Choice difference?
It mostly comes down to marbling. That’s the little streaks of fat running through the meat, and it’s what helps give a steak its flavor, tenderness, and juiciness.
Prime beef has more marbling than Choice, which usually means a richer, more tender steak.
Choice is still a great cut of beef. It just has a little less marbling and can be a better everyday option depending on what you’re cooking.
At the end of the day, both can make a damn good steak. It really comes down to what you’re looking for.
