Stoked to be bringing Chef Du Bar to St. Augustine, FL this fall. Originating in Grand Cayman, BWI it is unlike any cocktail competition, pitting chefs against each other over three rounds.

Rd 1 - classic cocktails with a twist
Rd 2 - chef’s cocktail creation
Rd 3 - mystery box

Idea is to bring together and strengthen ties between BOH and FOH - “Where Culinary Meets Cocktail” - no great restaurant can thrive if its chefs are thirsty and its bartenders are hungry. Cheers.

To louche or not to louche, that is the (absinthe) question.

Thursday spirit fact: a traditional way to drink absinthe is by slowly adding water, hydrating the components- most fennel and star anise - to the point they come out of solution, causing the milky opaqueness. This is louching. Allowing the water to flow through a sugar cube adds some additional sweetness if one prefers.

Doing a market for the first time next Saturday (5/25) where I will be slinging my sea salt and woodstuffs: Peps ART WALK at JTs Seafood Shack in the Hammock from 12-5pm

If you are looking for a sweet market near the beach it is worth checking out.

If anyone has a smaller canopy they don't mind loaning let me know - I am pretty sure ours is 12'x12' and thinking 8'x8' would be plenty sufficient. Cheers all!

Sake for the win. has been upping their sake game lately and had to pick up all they had left of this Kokumi Junmai Kimoto gem from Kokumi Sake Brewery in Nagano, Japan.

Welcome example of this classic style to snag in Florida -

Kokumi = “sixth taste - heartiness”
Junmai = pure rice (no spirits added)
Kimoto = a labor intensive, traditional method that uses natural lactic acid to prevent spoilage in the fermentation starter

A very umami driven, mouth filling sake with banana and coconut on the nose. Be brilliant with a tempura or fatty (salmon!) sashimi. Kampai!

Anyone for a sake tasting - so much more to explore than you might expect!
