This is a bourbon story only Florida could write. 🥃

In October 2016, Hurricane Matthew swept through St. Augustine, bringing widespread flooding and power outages across the city. While we’ve faced our share of hurricanes over the years, this one was different: we had a bourbon mash actively fermenting as the storm hit.

The distillery lost power and, without temperature control, the mash fermented under unusual conditions. Fermentation was complete in four days, but the development of its flavor chemistry was far from over. The loss of temperature control, combined with the introduction of ambient yeast, meant flavor development continued outside the production team’s carefully curated practices.

This ferment was curated by nature.

After this one-of-a-kind fermentation, the bourbon was distilled and laid down to age.

Nine years later, our distillers pulled Barrel #1723.

What emerged was a bourbon layered with rich caramel, oak and tremendous depth. We’ll never know exactly what role those unusual first days played in the bourbon it became. What we do know is that its story began during one of the most memorable storms in St. Augustine’s history.

We call it Through the Storm.

An old favorite is back with a fresh new look. 🥃

Stone’s Throw Rum has returned to the St. Augustine Distillery gift shop, now with updated packaging to match the rest of our spirits lineup.

Made in partnership with our neighbors at San Sebastian Winery, Stone’s Throw begins with our used bourbon barrels, which are sent just a “stone’s throw” away to age their port wine. Those same barrels make their way back to us, where we fill them with new-make rum for a one-year aging period.

The result is a complex, fruit-forward rum with notes of creamy vanilla, toasted coconut, bright fruit, molasses, and a mellow sweetness.
The new bottle design is available **in-store only** for now. Stop by the distillery to be among the first to take one home!

Upgrade your cocktail skills with a night out at the distillery. 🍸

Our Cocktail Crafting Experience is held only once a month, giving you the chance to experience St. Augustine Distillery after hours while learning the fundamentals of crafting great cocktails alongside our expert bartenders.

The evening also includes a curated charcuterie spread, a guided distillery tour, and the chance to sample bourbon straight from the barrel using a whiskey thief.
Next month's experience takes place Friday, September 11 at 7:00 PM.

We’ve always believed bourbon deserves a place on the summer menu, and with the season winding down, there’s still time for one more Florida Buck. 🍓🥃
Sweet strawberry, bright lemon, Florida Straight Bourbon, and the refreshing kick of ginger beer come together in this modern classic. Consider it our way of raising a glass to the last sips of summer.

FLORIDA BUCK

Ingredients:
• 2 oz St. Augustine Distillery Florida Straight Bourbon
• ½ oz lemon juice
• 2 whole strawberries, hulled and cut into chunks
• 3 oz ginger beer
• 1 dash bitters
• Half strawberry and lemon wheel, for garnish

Directions:
Muddle strawberries in a shaker. Add bourbon, lemon juice, and bitters. Add ice, shake well, and strain into a highball glass over fresh ice. Top with ginger beer, garnish with strawberry and lemon, and enjoy.
