Bourbon gets 100% of its color and up to 60% of its flavor from being aged in brand-new charred American Oak barrels. Wood naturally expands in hotter weather: during Florida’s sweltering summer, the staves of our barrels expand dramatically, soaking up more of the spirit and allowing it to mingle with the charred oak for a longer time. Our bourbon develops its color and flavor more quickly than many others.
As bourbon ages over time, some product is lost to evaporation. We call this the “Angel’s Share.” In our warm climate, we see increased losses of up to 10% per year! However, the bourbon left behind boasts a concentrated flavor and a robust yet delicate profile.
