Perched high on the limestone slopes overlooking Saint-Émilion, our visit to Château Pavie was an unforgettable reminder of why this estate stands among the great names of Bordeaux. The combination of dramatic terroir, meticulous winemaking, and centuries of history creates wines of incredible depth and precision.
The tasting began with Arômes de Pavie, the estate’s second wine, which delivered remarkable elegance and approachability while still carrying the signature power and minerality of the property. Layers of dark cherry, plum, violets, espresso, and crushed stone showed the influence of Pavie’s famed limestone and clay soils. A wine with richness, freshness, and unmistakable Saint-Émilion character.
Then came Château Pavie itself — bold, profound, and beautifully structured. The wine unfolds in waves of black fruit, graphite, licorice, mocha, and exotic spice with extraordinary concentration balanced by freshness and tension. The steep south-facing hillside vineyards, with their mix of limestone plateau, clay-limestone slopes, and sandy soils below, give the wine both power and precision.
Originally established centuries ago and elevated to Premier Grand Cru Classé “A” status, Château Pavie today represents one of the great modern success stories of Bordeaux under the late Gérard P***e. Attention to detail in both vineyard and cellar is evident everywhere, from low yields and careful parcel selection to extended élevage in French oak that polishes these monumental wines without masking their terroir.
