Round Two Presents: January Recipe, and Featured Pairing
This month we'd like to start telling our friends about great meals that are from the mind of Adele, and the great Round Two Wines that accompany them so well, at least in our humble opinion.
Featured Wine: 2008 Syrah
Contra Costa County

This wine shines with the essence of fresh fruit. It has a ruby color,
and notes of blueberry, cherrywood, and toasted almond. Delicately
perfumed, it is seamless and consistent from start to finish. It makes
a balanced and elegant accompaniment to any food; be it something
as delicate as sole, or as spicy as Thai food.
Dennis prefers to make Syrah from warmer growing regions, and the
resulting style is all about fruit, fruit and more fruit. “You should be
able to open it [2008 Syrah] on a cold, snowy day and pour yourself
a glass of California sunshine.” We all agree that this wine, which is
in its PRIME right now, has captured the essence of the whole
growing season, and tells it’s story when you open it.

Red Lake Ranch Kickin Chickin Chili
Makes 4-6 servings
1 1/4 lb ground chicken (or mixed meats)
2 cups diced fire-roasted tomatoes (canned)
1 jalapeño (seeded)
1-2 tablespoons chipotle in Adobe
2 cloves garlic (chopped)
1 1/2 cup onion (chopped)
2 cans plain pinto beans (rinsed and drained)
1/2 cup chicken broth
1tablespoon "kitchen gourmet" (for color)
1/4 cup olive oil (maybe more)
1/2 cup crumbled feta
Sautée onions in evoo
Chop the chillie and garlic together
Add to onions and continue cooking until you can smell the aromatics
At the gr. chicken and stirring often, cook until meat is separated
Add tomatoes, turn heat to simmer, and cover for 1/2 hour
Add broth and cook for another 1/2 hour
Add beans and kitchen gourmet, cover and stir.
Serve with crubled feta cheese, sour cream, or chives.
