Hey Minnesota (and our loyal fair fans 👋),

Quick update from the turkey crew…

We won’t be at the State Fair Kick-off in May... prepping turkey at our level is no small thing.

BUT… we’ve got something for you in the meantime.

Our fan-favorite small-batch lemonade (yes, the one you loved last season) is officially available off the fairgrounds 👀

You can grab it anytime at , crafted in small batches with their house-made organic syrups.

Swing by their cozy North Hill spot for a coffee, lemonade, or both and get a little taste of what’s waiting for you at the fair.

Their space is also epic, welcoming and plain fun!

Supporting local isn’t just something we say—it’s what we do.

✨ EASY HOLIDAY TURKEY BREAST (BONUS: TURKEY TO GO STYLE) ✨

Everyone has their own turkey ritual — we’d never overstep.
But if you’re craving an easy, no-fuss roast this holiday season (or just can’t get enough turkey after the big day), here’s a simple boneless breast recipe you can make any night of the week.

We used a small boneless breast and let the oven do all the work. Minimal effort, maximum flavor.
Juicy, tender, and perfect for leftovers, sandwiches, or a quick holiday dinner.

Save this for later — and tag us if you make it. 🦃

Small Boneless Turkey Breast • Oven-Roasted • 1:45 - 2 Hours

RECIPE (Simple + Foolproof)

Ingredients:

1 small boneless turkey breast

2 tbsp olive oil or melted butter

1–1½ tsp kosher salt

1 tsp black pepper

1 tsp garlic powder

1 tsp onion powder

½ tsp smoked paprika

Fresh thyme or rosemary (optional)

Instructions:

1. Preheat oven to 325°F.

2. Pat turkey breast dry. Rub with olive oil/butter and all seasonings. Keep netting on!

3. Place on a baking sheet or in a small roasting pan.

4. Bake 1 hour 45 min–2 hours or until internal temp hits 165°F.

5. Rest 10–15 minutes before slicing for extra tenderness. Don't forget to take the netting off!

A few fun facts to keep the turkey talk going 👇

Minnesota ranks #1 in U.S. turkey production.

Minnesota turkey farmers raise around 40-42 million birds annually.

In 2023, Minnesota produced about 39 million turkeys, which is about 18% of all U.S. turkeys.

The U.S. raises approximately 218 million turkeys per year (in total) across the country.

Wild turkeys have 5,000 to 6,000 feathers.

Wild turkeys can run up to ~18 mph.

Wild turkeys can fly short distances (e.g. to roost in trees).

Domestic (commercial) turkeys are typically too heavy to fly, especially as adults.

Firecracker Baked Turkey Meatballs:

Sweet, spicy, and packed with protein! You don’t have to wait for the State Fair to enjoy delicious turkey recipes year-round. this one’s easy, crave-worthy, and good for you all year long.

For the Meatballs:
1 lb ground turkey
1/2 cup panko breadcrumbs
2 tbsp soy sauce
1 garlic clove, minced
1 inch fresh ginger, minced
whites from 2 green onions, finely chopped
salt and black pepper to taste
drizzle of olive oil for the pan

Firecracker Sauce:

2 1/2 tbsp mayonnaise
1/2 to 1 tbsp milk (we skipped sour cream but you can add 1 to 2 tbsp if you like it creamier)
1 tbsp honey
1 tbsp soy sauce
1 tsp sriracha, or more to taste
Optional: 1/2 tsp rice vinegar or lemon juice for tang
Optional: pinch of chili flakes

To Serve:
basmati rice, cooked
roasted green beans
green onion tops for garnish

Directions:
Preheat oven to 425f. Combine turkey, panko, soy sauce, garlic, ginger, green onion whites, salt, and pepper. Mix until just combined. Roll into 2-inch meatballs and place on an oiled baking sheet. Bake for 18 to 22 minutes, until golden and the internal temperature reaches 165f. While baking, whisk together the firecracker sauce ingredients until smooth and slightly thin. Assemble bowls with basmati rice and green beans, add meatballs, drizzle with sauce, and top with green onions.

High protein, easy, and crave-worthy. Turkey's not just for the fair season.

Remember us at Turkey to Go work year round in Poultry its not just 12 days for us!

Avian influenza has popped back up in Minnesota and South Dakota, marking the first confirmed case among commercial birds since spring.

Minnesota is the #1 turkey-producing state in the country, and this news hits close to home for the hardworking farmers who raise the turkeys we all enjoy. Producers are once again stepping up biosecurity and installing protective measures to keep migratory birds—the main carriers of bird flu—away from barns.
