The Denver steak (also known by the Japanese as the Zabuton, which translates to “sitting cushion”) is a well-marbled, tender, and flavorful cut of beef taken from the underblade of the cow’s shoulder, known as the “chuck primal.” This steak is one of our absolute favs! That’s because Denver has heavy marbling that gives it a rich, beefy taste similar to a ribeye. The muscle doesn’t work very hard, which results in one of the most tender cuts from the chuck section.
Fun fact: The name “Denver steak” was created as a marketing term in 2009. It has no actual historical connection to the city of Denver! If you spot one in our case, consider it your lucky day. You’re gonna love this steak! 🥩
