This little dude grew up to make green beans taste like brown crunch water. My 3 year old keeps asking for pictures of when I was a kid. She’s convinced in her mind that as we grow older, I will become young again and she will drive me around in the car seat. I can only hope I get such a luxury in my old age.

Fun fact, one of the original ideas for the biz name was Kiki and Panda in honor of my child’s favorite stuffed animals at the time and I was going to focus specifically on African and Central American coffees.

💨💨READY FOR TAKEOFF 🛫✈️

Sample roasting some new coffee, gonna try and see what I can dump in the next couple of weeks.

One is a new Guatemala, meant to have some real chocolatey notes. The other is a crop from Mexico, produced by a co-op of women producers. Has some solid chocolate covered cherry vibes with a hint of praline.

Other new stuff went live in the last few weeks. A new washed Ethiopian with a very clean profile, nice jasmine pearls with sweet mango and bubble gum vibes. Also a rad anaerobic coffee from Ecuador that has a much more tropical personality. Tamarind, brown sugar and papaya.

Also, last batches of Todos Santos and Ethiopia Daanisa are on the shelves at so act fast my friends!

Even with an infinite amount of time, I would not be able to conjure up a reasonable guess as to what is meant to be in this campfire mug outside of the pink ooze from that Ghostbusters movie.

Seasoning the drum on a new sample roaster. I’ve just witnessed the true darkness of coffees that enter second crack and I’m mesmerized.

I am pretty sure there is nothing left in here to be considered “flavor”, but the main goal is to basically roast away any undesirable particles in the roaster that accumulated as part of the cleaning and manufacturing.

That said, as soon as I finish seasoning this bad boy, 100% I will roast to this degree of ashy madness once again and consume the flavors of charcoal and burning.

Don’t try this at home. Took some coffee straight off the roaster and broke all the rules to brew this little pour over on the fly.

Mistakes were made. First, this coffee is probably not even done changing chemically. There’s gas in my coffee aka CO2 (I think) so rather than water hitting the coffee, it hits the gasses being released, so now some coffee is under extracted and some is over extracted. It’s like a banana where halfway through it’s under ripe and by the end it’s mushy and brown.

Number two, not hot enough water and a cold ceramic origami brewer. Cold = less extraction. So whatever good might be in this bean, less heat means it’s not ending up in the cup. It’s like trying to brew tea with cold water … it would take forever.

Error three … I dunno, I’m drinking it by myself 🤷🏼‍♂️

Sn**ch up a bag of the Kenya Mukarimu Estate for something sweet or some Nicaragua Tale of Two Neighbors for a smooth apple and honey, creamy coffee.
