We must be doing something right to keep bringing such kind, curious, and open-hearted folks to our processing workshops! We’re so grateful for all the wonderful energy and enthusiasm we get for events like this. 🍵💚

This was the last of three workshops this season, and it went great. We made another batch of beautiful hand picked, hand rolled black tea together and everyone took some home.

We were fortunate to host such a wonderful group of people at last Saturday’s black tea processing workshop! We made beautiful batch of handpicked and hand rolled black tea, and everyone took some home to enjoy at their leisure.

We have one more processing workshop coming up on August 2nd, then we’re done with them until next season. They sell out quickly, so make sure to sign up for our newsletter on our website if you want to be notified when tickets are available in the future!

There’s an abundance of very tender new growth in our shaded plot. We’ve made a small amount of white tea with the first bit that we harvested (last photo), but there’s a whole lot more on the way!

What do you think we should do with it? Make more tencha for matcha, shaded white tea, or something else?

With Japan’s very well-publicized matcha shortage ongoing, I think many of us growing tea in the US have been approached to see if we can fill any of the demand. Some folks who are starting a matcha cafe in Portland reached out to us last year and got the wheels turning for our own production experiment. They’ve got the granite mills, so we just need to produce the tencha (unmilled precursor to matcha).

This spring, we set aside a couple rows of our Japanese clones, shaded them for 35 days, then harvested the dark, tender new growth. Without getting into the logistics too much, it turns out that steaming and drying the unrolled leaves without any damage or discoloration is pretty challenging without specialized equipment! Still, we’re proud of our results for our first ever experiment with this style of tea production, and are already scheming up new ways to streamline our production next year.

For now, the unground tea is resting in cold storage until this autumn, when it will be taken out and milled.

For folks nearby, we’ve got 2 year old seedlings available for purchase out at the farmstand and at our Salem Saturday Market booth. Newsletter subscribers have had first pick of the full plant selection, but there are still some real beauties remaining!

For folks wanting the smaller 1 year seedlings, those will be available soon. We have a few large plant orders to fill before we can decide how many to reserve for our annual Tea Open House (Saturday, June 14th), how many for , and how many to grow out into next years stock of 2 year seedlings.

First pick of the year, processed green, as usual. Just a small harvest off of some unpruned bushes. It needs to rest a bit to really develop, but the impression of the first taste is very promising! Refreshing, sweet, more floral than usual, no off-notes in the aroma. The energy of fresh green tea is intense and immediate, so we have to hold back from drinking too much, for now.

Great germination with our new seedlings again this year!

For folks hoping to buy tea plants, two year seedlings in 14” pots are already out for sale at the farm stand, open weekends as of this month. The one year olds in 7” tubes will be available in just a couple of weeks.
