It starts at sunrise, with skilled hands in the field carefully cutting each head to protect its crisp texture and freshness. In under just a few seconds, these skilled employees cut the lettuce, remove damaged outer leaves, turn the head for visual inspection, then pack it to maintain food safety and extend shelf life.

We’re wrapping up National Salad Month with a fresh, herby, Protein-Packed Green Goddess salad that’s big on crunch and even bigger on flavor. Herby dressing, roasted chickpeas and shredded chicken that keep it so satisfying - perfect just in time for summer! 
 
Here’s how to make it yourself:
 
Ingredients
Your Favorite Green Goddess Dressing
3 heads Tanimura & Antle Artisan® Sweet Gem Lettuce, chopped
⅓ cup green onion, sliced
2–3 Persian cucumbers, sliced
1½–2 cups rotisserie chicken, shredded
1.5 cups Roasted Chickpeas
 
Quick Directions
Chop Artisan Sweet Gem Lettuce and add to a bowl with cucumbers + green onion.  Add shredded chicken and roasted chickpeas. Drizzle with Green Goddess dressing and enjoy!
