10 ounces enchilada sauce
4 ounces mild diced green chilis

1 tablespoon fresh cilantro, chopped

15 ounces whole milk ricotta cheese
1 ½ cups finely shredded parmesan cheese, plus additional for optional garnish
2 tablespoons olive oil, extra virgin
1 tablespoon lemon juice
1 teaspoon lemon zest, plus additional for optional garnish
1 teaspoon grated garlic
½ teaspoon salt
¼ teaspoon fresh cracked black pepper, plus additional for optional garnish
½ pound spaghetti noodles, cooked according to package directions (approximately 2 quarts water with 2 teaspoons salt)
5 ounces fresh baby spinach leaves (approximately 4 to 4 ½ cups)

12 ounces linguine
1 small onion, sliced thin
14.5 ounces fire-roasted tomatoes, not drained
½ cup fresh basil, measured loosely in measuring cup whole and then roughly chopped (you can add more if you want)
4 cloves garlic, sliced thin

1 lemon zest
2 tablespoons olive oil

1 tablespoon olive oil
1 pound lean ground beef 93% to 7% (also known as ground sirloin)
1 packet onion mushroom soup mix, I used Lipton brand from a 1.8-ounce box
2 cups water, room temperature
4 cups 1 quart low-sodium vegetable broth
15.25 ounces whole kernel corn, drained
14.5 ounces cut green beans, drained
14.5 ounces peas and carrots, drained
14.5 ounces petite diced tomatoes, in juice
½ teaspoon salt
½ teaspoon black pepper
½ pound dry elbow pasta noodles (8 ounces)
