Brown butter cream pie cookie sandwich 🍪

Inspired by the oatmeal cream pies you loved as a kid, but we’re giving it a more modern, elevated twist.

We nailed the rich brown butter flavor… but now we’re dialing it in so it doesn’t overpower the cream. Right now we’re testing and adjusting the sweetness levels to get that perfect balance where nothing competes and everything hits.

Not finished yet, but we’re getting close.

🍪 Biscoff — flavorful, maybe too sweet
🍪 Oreo — solid, but we want the Oreo to pop more and considering a darker cocoa base.

🍪 We’ve been on a mission to build the best cookie for Cree Ice Cream…one that stands on its own and works as the ultimate ice cream sandwich.

After 2 ½ months (and eating a lot of cookies 😩😅), we’re getting close. Our first lineup:
- Chocolate Chip
- Chocolate Chip Pecan
- Toffee

We’re now starting samplings and we’ve sent out our first batch for feedback. Still a few tweaks to go, but we’re almost there. If interested in a batch for tasting and feedback, DM us.

Peaches and Hot Honey 🍑🍯

One of my favorites so far.

We have been working on improving how our jams show up in ice cream and finally found a great spot. The peach jam and flavor comes through bright and clean while the honey supports instead of competing.

In the past our flavors competed. This time they complement each other.

It also feels light even in our custard base and keeps you coming back for another bite. Still learning and a great step forward. Back to the lab we go.

Fruit is mostly water. Sounds obvious… but I didn’t fully appreciate what that meant until I started making ice cream myself, especially this toasted coconut and strawberries. Which was light, so refreshing, and it’s now one of my favorite flavors.

Most fruits contain 70–90% water. And in ice cream, water can be tricky:

- More water equals more ice formation
- More ice equals larger crystals
- Larger crystals equals icy / grainy texture

So when a fruit ice cream tastes amazing but feels a little icy…It’s often not the recipe. It’s the water content.

Now I think about:

- How much water am I adding?
- Should fruit go in the base or as a ripple?
- How do I protect texture?
- Do I need to concentrate the fruit?

Because great ice cream isn’t just about flavor…It’s about texture, balance, and structure.

Still learning. Still refining. Still chasing that perfect spoonful 🍨
