Dinner tonight - Trader Joe's tricolor gnocchi with creamy pesto sauce, sauteed asparagus with grated Parmesan cheese, sweet Italian sausage and garlic bread.

I'm a sucker for gnocchi and I was excited to try these. I'm a fan. They were very affordable, simple to prepare, and very tasty.

Last night's dinner! Chicken Souvlaki! Great job to those who guessed what I was up to.

I love chicken souvlaki paired with saffron rice, pita bread, sauteed zucchini, and of course tzatziki sauce!

What's something kinda unconventional that you enjoy for breakfast? Today I made a baked potato topped with pesto, sauteed spinach, bacon, and a fried egg.

I've never had a baked potato for breakfast and I actually really enjoyed it. A warm and hearty start to the day.

We hit up today and, WOW! The spicy tonkatsu ramen was incredible. Such a nice rich broth with a nice little kick. Today they were doing a bogo on ramen. Seems it's a Tuesday deal. Go follow them to keep track of deals. You won't be sorry! It was delicious 😋

**Super transparent post incoming**

Where have I been hiding, you ask? Well, life threw me a curveball back in November (don't worry, no injuries!). I was laid off from my fulltime job, and let me tell you, finding a new one during the holiday season was...well, let's just say not awesome!

Between the resume re-writing and interview dance, my creative spark took a little vacation. Being in front of the camera felt less like "action!" and more like "action...later?" But hey, sometimes you gotta step away to find your way back, right?

And guess what? The good news is finally here! I just accepted a **brand new job** and I'm SO excited! It feels amazing to be back in the swing of things (and also getting back in the kitchen, whipping up some culinary magic). ✨

So, buckle up, buttercup, because I'm ready to get back to creating, connecting, and sharing all the deliciousness with you! Stay tuned for new recipes, kitchen adventures, and maybe even a few behind-the-scenes peeks at my new work life.

Thanks for sticking with me through this little hiatus. Your support means the world (and maybe even a slice of cake)!
