Firing up before dark! Will be a quick boil... Sap still coming in slower than normal but the snowpack is finally melting away - next week will be huge with temps in the 50s!

A beautiful batch of log-grown shiitake mushrooms just harvested and dropped off at Mabbetsville Market These are a rare treat compared to the typical sawdust-based cultivation that is done commercially.

Back in the game - first boil of 2019 last night! Around 80 taps in so far, and expect things to go back into near hibernation with upcoming cold snap. Need the rest after a very busy few days getting everything cleaned up and running!

The cool fall weather has brought the return of Lion's Mane mushrooms! We've reached out to a couple of our local vendors and will hopefully have an update on where you can get these rare treats in the next day or two! Log-grown shiitake should not be far behind with this cool and wet weather...

These pancakes changed my life! I became familiar with them when living in Pittsburgh in the mid 1990s - Pamela's in Shadyside and Squirrel Hill was always packed and worth the wait. This recipe recreates them perfectly - and they go great with real maple syrup!

Never can I remember making syrup with mosquitoes, tornado warnings, or catching ticks while collecting sap. Today was nice to get back to normal maple season weather!
