When we started this farm, the idea seemed simple: take care of the soil and grow really good food for people. We talk a lot about the food. We don’t talk enough about the soil.

These two photos were taken during the same week, at the height of this summer’s extreme drought. A nearby pasture is on the left. A Stout Creek Farm pasture is on the right.

For us, these photos bring the work back to one question: What happens to the rain after it falls?

We want it to soak into the soil and stay available to the plants. That’s why we move our cattle, sheep, chickens, and turkeys across the land and give each pasture time to recover. We leave grass behind to shade the ground and slow evaporation. Roots and soil organisms help create spaces where water can soak in. As roots, manure, and plant material break down, they add organic matter that helps the soil hold moisture.

If we’re doing it right, our soil will act more like a sponge, catching rain and holding it for the dry days ahead.

We can’t make it rain. We can work to keep more of the rain we get.

Turn up the volume! The sheep are on the way to their daily all-grass brunch.

For a sheep, a pasture isn’t one big bowl of the same food. It’s a menu.

With narrow mouths and flexible lips, sheep pick through the pasture for tender leaves and shoots. They can select a bite from among surrounding stems, choosing their way through what grows in front of them.

Those preferences matter. Left in one place too long, sheep return to their favorites as soon as new growth appears, biting them down again and again. Those plants are left with too few leaves to catch sunlight and recover.

So our sheep move to fresh pasture every day. They get a new menu, and the plants behind them get time to grow back. That’s why rest time is crucial for the land.

And the relationship goes beneath their feet.

Microbes in a sheep’s stomach turn grass into energy. Its manure and urine return nutrients to the pasture. Microbes in the soil break all that down, along with leftover leaves and stems, to feed the next round of grass.

The land feeds the sheep. The sheep feed the land.

For now, though, there’s fresh grass ahead, and brunch is calling.
