Here we go! Salsa de chile de árbol de mi tia Lorena recipe: 3 lbs Roma tomatoes
Small handful of chile de árbol (8-10 chiles)
5 garlic cloves
1/4 cups of olive oil
Salt to taste
1 cup and a half of water
At high heat and in a medium pot add half of the oil, add tomatoes and salt, cover and let the tomatoes char a bit, add 1.5 cups of water, cover and continue at high heat, check in on the tomatoes after 12-15 minutes. If soft turn off. Set aside.
In a small frying pan heat up the rest of the olive oil, add your garlic and let them turn golden brown, remove from heat, add your chiles, make sure they go through the hot oil, then add to the blender, add a bit of salt to taste.
When tomatoes are nice and soft add them to the blender, mix on high. Your salsa is ready.
