The key to award winning brisket is basting it with beef tallow. The process of rendering tallow for this is pretty simple. You can get beef fat from the butcher at most grocery stores. Trim the fat and remove any excess meat. Then place the fat in a crock pot on low for about 24 hours. The final step is staining the beef tallow and placing it in molds in the refrigerator to solidify. Place the solid tallow bricks in the freezer for use when cooking your next brisket.
