Loaded BBQ Pulled Chicken Potatoes 🤎✨

Made a batch of these for meal prep and whew… comforting, flavorful, and just layered the right way.
This makes about a minimum of 8 potatoes.
Start with 4 chicken breasts in the crockpot.
Season with basil, smoked seasoning, paprika, black pepper, and 2 tbsp chicken bouillon.
Cook on low 6–7 hrs (or high 3–4 hrs) until fork tender.
Shred and toss in BBQ sauce. Let it sit so it can soak in.
While that’s going, bake your potatoes:
Wash, dry, poke holes, rub in olive oil + salt.
Bake at 400°F for 45–60 mins until tender.
Quick cabbage slaw:
In a jar add vinegar, brown sugar, and a little smoked seasoning.
Add shredded purple cabbage, shake, and let sit (the longer the better).
Caramelized onions:
Slice a red onion thin and cook in 2 tbsp butter on medium-low until soft, golden, and sweet.
Now build it:
Open your potato, add 1 tbsp butter, salt + pepper.
Layer in BBQ pulled chicken, caramelized onions, pickled cabbage, shredded cheese, green onions, and a drizzle of BBQ sauce.
That’s it. Simple… but done with intention.
